Grits With BBQ Sweet Potatoes, Apples & Onions

Directions

1Preheat oven to 425°F.

2Dice up the potato, onion and apple and place in a large bowl. Drizzle with coconut oil and toss to coat.

3Pour onto a baking sheet and season with fresh thyme, salt, and pepper.

4Bake until fork tender.

5Meanwhile, bring 1 cup water to a boil in a pot.

6Turn off heat and whisk in dry Palmetto Farms grits, stirring vigorously to avoid lumps.

7Heat over low until creamy and the consistency of heavy mashed potatoes.

8Spoon grits into two bowls and top with the roasted sweet potato, onion, and apple.

9Drizzle with barbecue sauce and serve.

1 large sweet potato, diced

1 red onion, diced

1 apple, diced

2 tbsp coconut oil

1 tbsp fresh thyme, chopped

salt & pepper

1/2 cup Palmetto Farms grits
